Mostly follow this Guide.

As configure flags you can use:

cmake -DCMAKE_BUILD_TYPE=release -DQTONLY=ON -DCMAKE_INSTALL_PREFIX=/Applications/ ../Marble

If you want to create a distributable disk image see Projects/Marble/MacPackaging
